Who says you can’t play with your food? To celebrate the release of Minions, I decided it would be fun to make something for the kids inspired by it! This recipe for Minions Mac and Cheese Cups has been inspired by Minions © 2015 Universal Studios. All rights reserved. We didn’t get a chance to catch Minions in the theater this summer because of our hectic travel schedule. But we loved them in the other movies from Illumination Entertainment (Despicable Me and Despicable Me 2) and were really excited to see the Minions get their own movie! It released 12/8/15!
I don’t know if you’re like my family, but our weekdays are really hectic. Between school events, work and lessons, it feels like we hustle hustle all week long. By the time the weekend comes, we want to slow down and reconnect as a family, which is why we make family movie night a priority in our house. This recipe for Minions Mac and Cheese cups is great because it can be prepped ahead of time and is fairly mess free.

Minions Mac and Cheese Cups
Ingredients:
- 2 cups elbow macaroni (cooked according to the directions on the box and drained)
- 1.5 cups Monterrey jack cheese
- 1.5 cups sharp cheddar cheese
- 2 T garlic
- 1 cup broccoli, chopped
- 1 cup milk
- 1 egg
- 1 T butter
- 1 T salt
- 2 T olive oil
- 1/4 cup dry Italian bread crumbs
- 12 black olives
- 1 cheese stick
Method:
Preheat oven to 350 degrees. Grease muffin tin very generously with olive oil or non stick cooking spray. Shred cheese and combine in bowl. Reserve 1 cup for topping.
Combine cooked macaroni, broccoli, milk, garlic, butter, egg and salt. Stir well until macaroni is well coated.
Combine above with shredded cheese and stir well. Mixture should be moist and firm.
Spoon mixture into muffin tin. It is okay fill them to the top. Combine oil and bread crumbs. Spoon on top of the macaroni and cheese cups. Then top with the remaining cheese.
Bake at 350 for 30 minutes. Allow to cool for additional 30 minutes before handling.
To make the Minions goggles and eye, slice string cheese into circles and flatten like a pancake between your thumb and index finger. Slice an olive into 4. Use the “end” pieces for the inner piece and the “inside” pieces as the strap. To make the strap, slice the olive in half again.
Place your finished product on top of your Minions Mac and Cheese cup.
We really enjoyed watching the Minions movie for family movie night. And the Minions Mac and Cheese Cups were a hit!

Because I know I’m not the only one who struggles with easy weeknight meals, here are five of our favorites. These can be made in 20 minutes or less.
- Pot Roast with carrots, potatoes and a side salad. Use your slow cooker for the roast!
- DIY sandwich night. This one is a hit with my kids, I lay out sandwich fixings on my favorite fancy platter and let the kids make their own. They think it is so fun that they get to choose. I think that cheese and lettuce is a weird sounding sandwich, but my son loves it! I serve this with cucumber slices.
- Pesto tortellini and rotisserie chicken. My kids cannot get enough pesto tortellini (cheese tortellini combined with pesto). I get the freshly made kind at the grocery store- it’s done in about six minutes! We usually have broccoli with this one.
- DIY rice bowl night. I set out cooked rice, hamburger, sour cream and chop whatever veggies I’ve got on hand (each in their own bowl). I pull out all of the salad dressings and salsas I’ve got in the fridge and let the kids make their own bowls. My kids will eat veggies by the gallons this way (and it is a great way to use up the leftovers in the fridge)!
- Hot ham and cheese sandwiches. Place deli ham and cheese on a roll, wrap in a paper towel and microwave for 30 seconds. This was my favorite weeknight meal when I was a kid. I serve this one with chips and carrots (this one is the quickest of them all for us).
I’m not sure why, but I’ve never made mac and cheese cups – I love this version with the minions decorated on them. So much fun! #client
