We are in the THICK of summer here in New England. Everyday around 3:00 pm, I think about how much I don’t want to cook dinner for my crew and how I’d rather just serve everyone cold cereal and fruit. Both Mike and Malone would be over the moon if I did. I have pulled that trick a few times this summer, along with the let’s go out for ice cream for dinner trick. But at some point, I need to come up with some summer supper ideas that I can actually get behind.
I’ve curated this list of 10 amazing summer supper ideas both for my benefit and yours. These all look amazing and I might actually be able to serve my family something other than our standard taco salad, breakfast for dinner, or DIY sandwich night.

Looks delish!! I’ll have to go pin a few. We’ve eaten a lot of tacos and chicken this summer. Last night, I made tuna melts with these panini thins I found at TJ, just to make it special and I served it with a chickpea, tomato and cucumber salad. Hit the spot!!

We’ve eaten our fair share of tacos and chicken this summer too. Malone is wishing fall and winter would come a bit faster because he LOVES soup!
I really don’t like to cook much when it’s hot out. I usually will make a skillet dish or make something on the grill. I hate heating up the house when it’s hot outside. Thanks for including my microwave hasselback potatoes.

I agree! I get so tired of making dinner. These look great, but, sadly I don’t think my crew would eat any of them except the BBQ pork and the potatoes. 🙁

Malone would likely only eat a few things on this list too. I often make meals I don’t think he’ll like, but sometimes he surprises me!
These all look amazing! I love making hasselback potatoes, but only have cooked them in the oven. Might have to utilize the microwave more 🙂

Chickpeas, pesto, and artichokes – some of my favorite things!!!! I love easy meals all year round but my favorite thing to grill is salmon – salt, lemon, lots of dill. So yummy with the oils from the skin. The parts that get crispy are my favorite!

We love salmon, but don’t have a grill. It’s one of the downsides to apartment living.
