Things here at team A Cookie Before Dinner are busy! And busy is a great thing! Between running this blog, working my side hustle, keeping up a home and spending time with my family, life is crazy! A few times this past week, I was so busy taking over the world that I forgot to eat lunch! I couldn’t believe it!
Skipping lunch isn’t a habit I want to get into, no matter how busy I am. Instead, I want to create systems and habits to make sure I’m still eating, even when I’m too busy to eat lunch!
What to do when you’re too busy to eat lunch!
Plan ahead! The key to success is preparation. I know that I am much more likely to eat lunch if there are lunch things in the house. If I don’t have easy things to make for lunch, it is easy to skip it!
Schedule time in your day for lunch. Just like important meetings and deadlines, lunch is important and deserves space in your calendar too. After missing lunch three days last week, I set an alarm on my phone to remind me everyday to take time for lunch!
If you can’t make lunch happen, work smaller snackable meals into your day. Lunch doesn’t have to be a huge meal you eat at noon. If you’re tight on time, aim to eat something around 10:30 am and then again around 1:00 pm. Instead of one big lunch meal, two smaller ones will work!
Ask a friend to lunch. You’ll kill two birds with one stone, you’ll get a meal in and time with your friend!
Make lunch matter by with a hearty vegetable soup. One of my favorite ways to make sure I eat lunch to make sure lunch is a meal I look forward to.
As the weather turns cooler, soup is where it’s at for me! Over the years I have tried some crazy ways to make sure I get enough veggies in me…. spinach smoothies, kale chips and black bean brownies are just a few of the things I’ve tried. But as it turns out, it’s as simple as soup!
I am obsessed with this lunch. I’ve had it three days this week. A simple salad with “taco” ranch dressing (seriously…. taco seasoning plus + ranch = so easy), an apple, and Good Natured Soup Hearty Corn and Chipotle Chowder.
Good Natured Soup is new from Progresso™. They’ve got two other flavors, Hearty Tomato with Spinach and Roasted Garlic; and Hearty Lentil with Garden Vegetables. Each soup offers 3/4 cup of vegetables per serving and are free from GMO ingredients, preservatives, artificial sources and colors.
On top of that, they’re also vegan too! They use bean powder and vegetables purees as the base and prove that you can obtain a yummy creamy texture without cream!
Give yourself grace. Sometimes, life can get crazy. If you skip lunch once in awhile, it isn’t the end of the world. Give yourself grace and move forward.

I’d love to try Hearty Corn and Chipotle Chowder
The corn chowder sounds delicious, especially with smoky chipotle!
