You need:
- NESTLÉ® TOLL HOUSE Pumpkin Spice Refrigerated Cookie Dough
- Bacon
- Vanilla Ice Cream
That’s it! NESTLÉ® TOLL HOUSE has taken care of the hardest step- getting the perfect pumpkin spice cookie recipe. Theirs feature white chocolate chips and Libby’s 100% pure pumpkin.
Process:
- Bake cookies according to directions on label, allow them to fully cool.
- Prepare your bacon (I baked mine in the oven at 400 degrees for 14 minutes).
- Drain bacon and cool.
- Cut one piece of bacon in half and layer between two cookies, adding a generous scoop of vanilla ice cream.
- Wrap in wax paper and freeze.
Seriously guys! These are amazing and so simple to make. I’ve already had requests from friends and family to make them for a few upcoming events. Did you know that you can freeze NESTLÉ® TOLL HOUSE refrigerated cookie dough? I didn’t either, but their package says it can be frozen for up to two months, if frozen by the use by date. Because this is a seasonal item, I’m going to make sure to stock up and freeze a few packages of the dough.

Huh this sounds intriguing! I’m actually a huge fan of desserts with bacon in them (particularly bacon chocolate!) I’ll have to try this one out.
