Our summer is in full swing, which means our neighborhood ice cream truck rolls down our street right after dinner. A few times a week, we let the kids indulge in dessert after dinner. I love serving them something that is on the wholesome side but still feels special. My kids are obsessed with yogurt. If it was an option, they’d eat it for every meal. When I was a kid, fruit pizza was one of my favorite desserts- it was a highlight of the church potluck for me. So when I was asked to create a new recipe using Yoplait® yogurt, I knew just what I was going to make. What is different about this mini fruit pizza recipe is that it is much more wholesome than traditional fruit pizza. In traditional fruit pizza, the layer between the cookie and the fruit is typically cream cheese frosting. I knew the yogurt would give the fruit pizza a new flavor dimension, ad boy was I right! One of the things that is great about this mini fruit pizza is that it can easily be made for a crowd, especially if you use store bought sugar cookies instead of starting all the way from scratch (I promise not to tell).

Ingredients:

  • 12 sugar cookies (homemade or store bought)
  • 1 container cherry orchard Yoplait® yogurt
  • 1 cup diced fruit (blueberries, strawberries, etc)
  • 8 ounces whipped cream cheese

Method:

  1. Combine whipped cream cheese with yogurt. Mix or whip until it is no longer lumpy.
  2. Using the yogurt and cream cheese spread, frost the cookies with a generous portion.
  3. Top with fruit and serve immediately.

Yields one dozen. Recipe can easily be doubled or trippled if needed.
